Description

Milk Barfi is a traditional Indian milk fudge made with milk powder, sweetened condensed milk, and flavored with cardamom and nuts. This quick and easy dessert is rich, creamy, and perfect for festive occasions or a sweet treat anytime.

  • 1 cup sweetened condensed milk
  • 1/4 cup unsalted butter or ghee
  • 1/2 teaspoon cardamom powder
  • 2 tablespoons chopped pistachios
  • 2 tablespoons chopped almonds
  • 1 tablespoon milk (if needed for texture)


Instructions

  1. Prepare the Pan: Grease a small square pan or line it with parchment paper and set aside.
  2. Melt Butter or Ghee: In a nonstick pan, melt the butter or ghee over low heat to ensure it does not brown or burn.
  3. Add Condensed Milk: Add the sweetened condensed milk to the melted butter or ghee and stir continuously for about 1 minute to combine well.
  4. Add Milk Powder: Gradually add the milk powder while stirring constantly to prevent lumps from forming and to create a smooth mixture.
  5. Cook Mixture: Continue cooking the mixture on low heat for 5 to 7 minutes, stirring constantly, until it thickens and begins to pull away from the sides of the pan.
  6. Add Flavoring: Stir in the cardamom powder and mix well for aromatic flavor. If the mixture feels too thick, add a tablespoon of milk to soften it slightly.
  7. Transfer and Spread: Transfer the thickened mixture to the prepared pan and spread it evenly using a spatula.
  8. Add Nuts: Sprinkle chopped pistachios and almonds evenly over the top and gently press them into the surface to set.
  9. Set the Barfi: Allow the barfi to cool at room temperature for about 1 hour until firm and set.
  10. Cut and Serve: Once set, cut into small squares or diamond shapes and serve as a delicious dessert.

  • Cook the mixture on low heat and stir continuously to prevent burning.
  • You can add a few strands of saffron soaked in warm milk for extra flavor and color.
  • Use a nonstick pan to avoid sticking and ease stirring.
  • Press the nuts gently on top so they adhere well without sinking into the mixture.
