A comforting and easy-to-make Mexican-inspired casserole that combines seasoned ground beef, creamy soups, cheese, and Doritos for a delicious and satisfying meal.

Ground Beef Mixture:
- 1 pound ground beef
- 1 small yellow onion, diced
- 1 packet taco seasoning
- 1/2 cup water
- 1 (10 oz) can Rotel diced tomatoes with green chilies, undrained
- 1 (10.5 oz) can cream of chicken soup
- 1 (10.5 oz) can cream of mushroom soup
- 1 cup sour cream
- 1 cup shredded cheddar cheese
Additional:
- 1 bag (10–12 oz) Doritos (Nacho Cheese or Cool Ranch), crushed
Instructions
- Preheat the oven: Preheat the oven to 350°F.
- Cook the beef: In a skillet, cook ground beef and onion until beef is no longer pink. Drain excess grease.
- Season the beef: Stir in taco seasoning and water. Simmer until thickened.
- Add remaining ingredients: Mix in Rotel, cream of chicken soup, cream of mushroom soup, sour cream, and 1 cup of cheddar cheese.
- Assemble: Layer half of the crushed Doritos in a baking dish. Pour beef mixture over chips. Top with remaining Doritos and cheddar cheese.
- Bake: Bake for 25–30 minutes until bubbly. Rest for 5 minutes before serving.
Notes
- You can substitute ground turkey or shredded chicken for the ground beef.
- For extra heat, add jalapeños or spicy taco seasoning.
- This casserole reheats well and is great for meal prep.
