Description

This Mexican Pizza recipe combines crispy flour tortillas layered with seasoned ground beef, refried beans, salsa, and melted Mexican blend cheese, topped with fresh vegetables for a flavorful and satisfying meal. Perfect as an easy and delicious Mexican-American dinner that the whole family can enjoy.

Ingredients

Scale

Main Ingredients

  • 4 large flour tortillas
  • 1/2 pound ground beef
  • 1 packet taco seasoning
  • 1/2 cup water
  • 1 cup refried beans, warmed
  • 1 cup salsa
  • 1 1/2 cups shredded Mexican blend cheese

Toppings

  • 1/2 cup diced tomatoes
  • 1/4 cup sliced black olives
  • 2 green onions, chopped
  • 2 tablespoons fresh cilantro, chopped

Other

  • Nonstick cooking spray

Instructions

  1. Preheat Tortillas: Preheat your oven to 400°F. Lightly spray both sides of the tortillas with nonstick cooking spray, then place them on a baking sheet. Bake each side for 5 to 7 minutes until golden and crisp, then set aside.
  2. Cook the Beef: In a skillet over medium heat, cook the ground beef until browned. Drain any excess fat. Stir in the taco seasoning and water, then simmer for about 5 minutes until the mixture thickens.
  3. Assemble the Pizza: Spread a layer of warm refried beans on one crispy tortilla. Top with the seasoned beef mixture. Place another tortilla on top.
  4. Add Toppings: Spread salsa evenly on the top tortilla, then sprinkle with shredded Mexican blend cheese, diced tomatoes, black olives, chopped green onions, and fresh cilantro.
  5. Bake: Place the assembled pizzas back in the oven and bake for 8 to 10 minutes, or until the cheese is melted and bubbly.
  6. Serve: Remove from the oven, slice each pizza into quarters, and serve hot for a delicious meal.

Notes

  • For a vegetarian version, replace the ground beef with sautéed vegetables or black beans.
  • Customize toppings according to your taste with jalapeños, avocado slices, or a dollop of sour cream.
  • You can use corn tortillas for a gluten-free option, but they may be less sturdy.
  • Use fresh salsa or your favorite store-bought brand for the best flavor.
  • Leftover pizzas keep well in the refrigerator and reheat nicely in the oven.
