For the Chicken Patties:

  • 1 lb ground chicken
  • ¼ cup red onion (finely chopped)
  • ¼ cup sun-dried tomatoes (chopped)
  • ¼ cup crumbled feta cheese
  • 2 tablespoons chopped fresh parsley
  • 1 tablespoon chopped fresh oregano (or 1 tsp dried)
  • 2 cloves garlic (minced)
  • 1 egg
  • ¼ cup breadcrumbs
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 tablespoon olive oil

Instructions

  1. Mix Ingredients: In a large bowl, combine ground chicken, red onion, sun-dried tomatoes, feta cheese, parsley, oregano, garlic, egg, breadcrumbs, salt, and pepper. Mix well.
  2. Form Patties: Shape the mixture into 6 patties of equal size.
  3. Cook Patties: Heat olive oil in a skillet over medium heat. Cook patties for about 4-5 minutes per side until golden brown and cooked through.
  4. Serve: Enjoy warm with tzatziki, salad, or in pita bread.

Notes

  • For a low-carb version, use almond flour instead of breadcrumbs.
