Description

Mashed cauliflower with sour cream is a creamy, low-carb alternative to traditional mashed potatoes. This recipe combines tender boiled cauliflower with roasted garlic, butter, and sour cream for a rich and flavorful side dish that’s perfect for any meal.

Ingredients

Scale

Vegetables and Aromatics

  • 1 large head cauliflower (about 2 pounds)
  • 4 cloves garlic (minced)

Dairy and Fats

  • 1 cup sour cream
  • 4 tablespoons unsalted butter
  • 1 tablespoon olive oil (for roasting garlic)

Seasonings

  • 1 teaspoon salt (or to taste)
  • 1/2 teaspoon black pepper (or to taste)

Instructions

  1. Prepare the cauliflower: Remove the leaves and stem from the cauliflower, then cut it into smaller florets. Rinse the florets thoroughly under cold water to clean.
  2. Cook the cauliflower: Bring a large pot of salted water to a boil. Add the cauliflower florets and cook for about 10-12 minutes until they are tender when pierced with a fork. Drain well and allow to sit briefly to release excess moisture.
  3. Roast and mix garlic: While the cauliflower cooks, roast the minced garlic in olive oil over medium heat until fragrant and golden. In a mixing bowl, combine the drained cauliflower, roasted garlic, butter, salt, and pepper. Mash or blend the mixture to your preferred consistency using a potato masher or hand blender.
  4. Add sour cream and season: Stir in the sour cream until everything is well combined. Taste and adjust seasoning with additional salt and pepper if needed.
  5. Serve: Transfer the mashed cauliflower to a serving dish. Optionally garnish with fresh herbs or extra butter. Serve warm as a delicious and creamy side dish.

Notes

  • For a smoother texture, use a food processor or hand blender to mash the cauliflower.
  • Adjust the amount of sour cream to make the mash creamier if desired.
  • Roasting the garlic in olive oil mellows its flavor and adds depth to the dish.
  • This dish pairs well with roasted meats, grilled chicken, or as a vegetarian entree.
  • To keep it dairy-free, substitute sour cream and butter with vegan alternatives.
