Description

A vibrant and flavorful Mango Jalapeño BBQ Shrimp recipe that perfectly balances sweet tropical mango with the spicy kick of jalapeño, grilled to perfection and coated in a tangy barbecue sauce. This dish is quick to prepare and ideal for summer grilling or a tasty, healthy main course.

Ingredients

Scale

Shrimp:

  • 1 lb large shrimp (peeled and deveined, tails on)
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp garlic powder

Mango Jalapeño BBQ Sauce:

  • 1 cup mango (peeled and diced)
  • 1 jalapeño (seeded and finely chopped)
  • 1/2 cup barbecue sauce (your favorite variety)
  • 1 tbsp lime juice
  • 1 tbsp honey

Garnish:

  • Chopped cilantro for garnish (optional)

Instructions

  1. Preheat the Grill: Preheat your grill or stovetop grill pan to medium-high heat to ensure the shrimp cooks evenly and develops a nice char.
  2. Prepare the Shrimp: In a bowl, toss the shrimp with olive oil, salt, black pepper, and garlic powder until evenly coated, enhancing the flavor and preventing sticking.
  3. Make the Mango Jalapeño BBQ Sauce: In a blender or food processor, combine the diced mango, seeded and chopped jalapeño, barbecue sauce, lime juice, and honey. Blend until smooth to create a sweet and spicy sauce.
  4. Reserve Sauce for Brushing: Set aside 1/4 cup of the blended sauce for basting the shrimp during grilling; keep the remaining sauce for serving on the side.
  5. Skewer the Shrimp: Thread the shrimp onto skewers to make grilling easier and to ensure they cook uniformly on all sides.
  6. Grill the Shrimp: Place the shrimp skewers on the grill and cook for 2–3 minutes per side. While cooking, brush the shrimp with the reserved mango jalapeño BBQ sauce to enhance flavor and moisture. Cook until the shrimp are opaque and lightly charred.
  7. Serve: Remove the shrimp from the grill, drizzle with the remaining sauce, and garnish with chopped cilantro if desired. Serve immediately for best flavor.

Notes

  • Adjust the heat level by choosing to keep or remove the jalapeño seeds according to your spice preference.
  • This shrimp pairs excellently with rice, grilled vegetables, or can be used as a filling for tacos.
  • If a grill is not available, the shrimp can be pan-seared on the stovetop using a grill pan or skillet.
