Cake:
- 1 box yellow cake mix (15.25 oz)
- 4 large eggs
- 1/2 cup vegetable oil
- 1 (11 oz) can mandarin oranges, undrained
Topping:
- 1 (20 oz) can crushed pineapple, undrained
- 1 (3.4 oz) box instant vanilla pudding mix
- 1 (8 oz) container frozen whipped topping, thawed
Instructions
- Preheat and Prepare: Preheat oven to 350°F (175°C) and grease a 9×13-inch baking dish.
- Mix Cake: Combine cake mix, eggs, oil, and mandarin oranges in a bowl. Beat until well blended.
- Bake: Pour batter into prepared dish and bake for 30–35 minutes.
- Prepare Topping: Mix crushed pineapple and pudding until thickened. Fold in whipped topping.
- Assemble: Spread pineapple topping over cooled cake.
- Chill: Refrigerate for at least 1 hour before serving.
Notes
- For a lighter version, use light whipped topping and drain some juice from the pineapple.
