For the casserole:
- 2 cups cooked white rice
- 2 cups cooked and shredded chicken breast
- 1 can (10.5 oz) cream of chicken soup
- 1 can (10.5 oz) cream of mushroom soup
- 1 cup sour cream
- 1/2 cup chicken broth
- 1 cup shredded cheddar cheese
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
For the topping (optional):
- 1/2 cup crushed buttery crackers or breadcrumbs
- 2 tablespoons melted butter
Instructions
- Preheat the oven: Preheat the oven to 350°F.
- Prepare the casserole: In a large bowl, combine cream of chicken soup, cream of mushroom soup, sour cream, chicken broth, garlic powder, onion powder, salt, and pepper. Stir in cooked rice and shredded chicken. Fold in cheddar cheese. Transfer the mixture to a greased 9×13-inch baking dish and spread evenly.
- Add topping: If using, mix crushed crackers or breadcrumbs with melted butter and sprinkle over the top.
- Bake: Cover with foil and bake for 25 minutes. Remove foil and bake an additional 10-15 minutes until hot and bubbly with golden brown topping.
- Serve: Let sit for 5 minutes before serving.
Notes
- You can substitute rotisserie chicken for added flavor and convenience.
- For extra texture, add drained green beans or peas to the casserole.
