Instructions
- Preheat the Oven: Preheat the oven to 350°F (175°C) and line an 8×8-inch baking dish with parchment paper.
- Mix Wet Ingredients: In a medium bowl, whisk together Greek yogurt, eggs, maple syrup (or honey), lemon juice, lemon zest, and vanilla extract until smooth.
- Add Dry Ingredients: Add coconut flour, poppy seeds, baking soda, and salt to the wet mixture, and stir until fully combined with no lumps.
- Bake: Pour the batter into the prepared pan, smooth the top, and bake for 22–25 minutes or until set in the center and lightly golden on the edges.
- Cool and Serve: Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing into bars.
