- 1 cup unsalted butter (softened)
- ½ cup granulated sugar
- 2 cups all-purpose flour
For the Filling:
- 4 large eggs
- 1 ½ cups granulated sugar
- ¼ cup all-purpose flour
- ½ teaspoon baking powder
- ½ cup fresh lemon juice (about 2–3 lemons)
- 1 tablespoon lemon zest
- Powdered sugar (for dusting)
Instructions
- Preheat the oven: Preheat the oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper or lightly grease it.
- Prepare the crust: Cream together the softened butter and ½ cup sugar. Add 2 cups of flour and mix to form a dough. Press into the pan and bake until golden.
- Make the filling: Whisk eggs, sugar, flour, baking powder, lemon juice, and zest. Pour over the hot crust and bake until set.
- Chill and serve: Cool the bars, refrigerate for 2 hours, dust with powdered sugar, cut into squares, and enjoy!
Notes
- For extra tang, add more lemon zest.
- Best served cold and can be made a day in advance.
