Description

  • 1 cup unsalted butter (softened)
  • ½ cup granulated sugar
  • 2 cups all-purpose flour

For the Filling:

  • 4 large eggs
  • 1 ½ cups granulated sugar
  • ¼ cup all-purpose flour
  • ½ teaspoon baking powder
  • ½ cup fresh lemon juice (about 2–3 lemons)
  • 1 tablespoon lemon zest
  • Powdered sugar (for dusting)

Instructions

  1. Preheat the oven: Preheat the oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper or lightly grease it.
  2. Prepare the crust: Cream together the softened butter and ½ cup sugar. Add 2 cups of flour and mix to form a dough. Press into the pan and bake until golden.
  3. Make the filling: Whisk eggs, sugar, flour, baking powder, lemon juice, and zest. Pour over the hot crust and bake until set.
  4. Chill and serve: Cool the bars, refrigerate for 2 hours, dust with powdered sugar, cut into squares, and enjoy!
