Main Dish:

  • 1 pound potato gnocchi
  • 1 tablespoon olive oil
  • 2 tablespoons butter
  • 2 boneless skinless chicken breasts (cut into bite-sized pieces)
  • 3 cloves garlic (minced)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon Italian seasoning
  • zest and juice of 1 lemon
  • 1/2 cup chicken broth
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 2 cups baby spinach
  • fresh parsley (chopped, for garnish)

Instructions

  1. Cook the Gnocchi: Cook the gnocchi according to package instructions, drain, and set aside.
  2. Sear the Chicken: In a large skillet, heat olive oil and butter. Add chicken, season, and cook until golden. Remove and set aside.
  3. Make the Sauce: In the same skillet, sauté garlic, then add lemon zest, juice, broth, and cream. Simmer until thickened.
  4. Combine and Serve: Stir in Parmesan, gnocchi, and spinach. Add chicken back in, toss to coat, and garnish with parsley.
