Main Dish:
- 1 pound potato gnocchi
- 1 tablespoon olive oil
- 2 tablespoons butter
- 2 boneless skinless chicken breasts (cut into bite-sized pieces)
- 3 cloves garlic (minced)
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon Italian seasoning
- zest and juice of 1 lemon
- 1/2 cup chicken broth
- 1/2 cup heavy cream
- 1/4 cup grated Parmesan cheese
- 2 cups baby spinach
- fresh parsley (chopped, for garnish)
Instructions
- Cook the Gnocchi: Cook the gnocchi according to package instructions, drain, and set aside.
- Sear the Chicken: In a large skillet, heat olive oil and butter. Add chicken, season, and cook until golden. Remove and set aside.
- Make the Sauce: In the same skillet, sauté garlic, then add lemon zest, juice, broth, and cream. Simmer until thickened.
- Combine and Serve: Stir in Parmesan, gnocchi, and spinach. Add chicken back in, toss to coat, and garnish with parsley.
