Instructions
- Preheat oven and prepare baking dish: Preheat oven to 350°F and line an 8×8-inch baking dish with parchment paper or lightly grease it.
- Mix dry ingredients: In a large bowl, whisk together the flour, sugar, baking powder, and salt.
- Combine wet ingredients: In a separate bowl, mix the eggs, lemon juice, lemon zest, melted butter, and vanilla extract until smooth.
- Combine wet and dry ingredients: Pour the wet ingredients into the dry and stir just until combined.
- Bake: Pour the batter into the prepared baking dish, smooth the top, and bake for 25 to 30 minutes until golden and a toothpick inserted in the center comes out clean.
- Cool and serve: Allow to cool completely in the pan. Dust with powdered sugar if desired, slice into bars, and serve.
