Italian Sausage Mixture:
- 1 tablespoon olive oil
- 1 pound Italian sausage (mild or hot, casings removed)
- 1 small yellow onion, diced
- 3 cloves garlic, minced
- 1 tablespoon tomato paste
- 1 teaspoon dried oregano
- ½ teaspoon crushed red pepper flakes (optional)
Soup Base:
- 1 (28-ounce) can crushed tomatoes
- 4 cups low-sodium chicken broth
- 1 cup water
Additional Ingredients:
- 8 lasagna noodles, broken into pieces
- ½ cup ricotta cheese
- 1 cup shredded mozzarella cheese
- ¼ cup grated Parmesan cheese
- 2 tablespoons chopped fresh basil
- Salt and pepper to taste
Instructions
- Prepare Italian Sausage Mixture: Heat olive oil in a large pot, cook sausage until browned. Add onion, cook until softened. Stir in garlic, tomato paste, oregano, and red pepper flakes. Cook until fragrant.
- Create Soup Base: Add crushed tomatoes, chicken broth, and water. Bring to a boil, then simmer for 10 minutes.
- Add Noodles and Finish Soup: Add broken lasagna noodles, simmer until tender. Season with salt and pepper.
- Prepare Cheese Mixture: Mix ricotta, mozzarella, and Parmesan in a bowl.
- Serve: Ladle soup into bowls, top with cheese mixture, basil, and serve hot.
