Sauce:

  • 1 cup fresh peaches, diced (about 2 medium peaches)
  • 2 fresh jalapeños, thinly sliced (seeds removed for less heat)
  • 2 cloves garlic, minced
  • 1/4 cup honey
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon soy sauce
  • 1/4 teaspoon smoked paprika
  • 1 tablespoon fresh lime juice
  • 1/4 cup fresh cilantro, chopped (optional, for garnish)

Instructions

  1. Season the chicken: Season both sides of the chicken breasts with salt and pepper.
  2. Cook the chicken: Heat olive oil in a large skillet over medium-high heat. Cook the chicken for 5–6 minutes per side until golden brown and cooked through.
  3. Prepare the sauce: In the same skillet, sauté peaches, jalapeños, and garlic. Add honey, apple cider vinegar, soy sauce, smoked paprika, and lime juice. Simmer until slightly thickened.
  4. Finish the dish: Return the chicken to the skillet, spoon the sauce over the top, and cook for another 1–2 minutes. Garnish with fresh cilantro and serve immediately.

Notes

  • For a spicier dish, leave some of the jalapeño seeds in.
  • You can substitute boneless chicken thighs for a juicier result, adjusting cook time as needed.
