Chicken:
- 4 boneless, skinless chicken breasts (about 6 ounces each)
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon olive oil
Sauce:
- 1 cup fresh peaches, diced (about 2 medium peaches)
- 2 fresh jalapeños, thinly sliced (seeds removed for less heat)
- 2 cloves garlic, minced
- 1/4 cup honey
- 2 tablespoons apple cider vinegar
- 1 tablespoon soy sauce
- 1/4 teaspoon smoked paprika
- 1 tablespoon fresh lime juice
- 1/4 cup fresh cilantro, chopped (optional, for garnish)
Instructions
- Season the chicken: Season both sides of the chicken breasts with salt and pepper.
- Cook the chicken: Heat olive oil in a large skillet over medium-high heat. Cook the chicken for 5–6 minutes per side until golden brown and cooked through.
- Prepare the sauce: In the same skillet, sauté peaches, jalapeños, and garlic. Add honey, apple cider vinegar, soy sauce, smoked paprika, and lime juice. Simmer until slightly thickened.
- Finish the dish: Return the chicken to the skillet, spoon the sauce over the top, and cook for another 1–2 minutes. Garnish with fresh cilantro and serve immediately.
Notes
- For a spicier dish, leave some of the jalapeño seeds in.
- You can substitute boneless chicken thighs for a juicier result, adjusting cook time as needed.
- Fresh peaches work best, but you can use frozen or canned (drained) in the off-season.
