These Jalapeño Corn Nuggets are crispy on the outside, creamy on the inside, and packed with spicy flavor. A perfect appetizer for any gathering!

Corn Mixture:
- 1 cup corn kernels (fresh, canned, or thawed frozen)
- 2 jalapeños (seeded and finely diced)
- 1/2 cup shredded cheddar cheese
- 1/4 cup cream cheese (softened)
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Coating:
- 1/2 cup all-purpose flour
- 1/4 cup cornmeal
- 2 large eggs
- 1 cup breadcrumbs (plain or seasoned)
- Vegetable oil for frying
Instructions
- Prepare Corn Mixture: In a medium bowl, combine corn, jalapeños, cheddar cheese, cream cheese, garlic powder, onion powder, salt, and pepper. Mix well.
- Shape and Chill: Form mixture into small balls, freeze on a baking sheet for 20-30 minutes.
- Coat Nuggets: Dip chilled nuggets into flour, then egg, and finally breadcrumb mixture.
- Fry: Heat oil to 350°F, fry nuggets in batches for 2-3 minutes until golden brown.
- Drain and Serve: Drain on paper towels before serving.
Notes
- You can add chopped green onions or hot sauce for extra flavor.
- Air fry at 400°F for 10-12 minutes, flipping halfway through.
- Serve with ranch or chipotle mayo for dipping.
