Description

These Jalapeño Corn Nuggets are crispy on the outside, creamy on the inside, and packed with spicy flavor. A perfect appetizer for any gathering!

Corn Mixture:

  • 1 cup corn kernels (fresh, canned, or thawed frozen)
  • 2 jalapeños (seeded and finely diced)
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup cream cheese (softened)
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Coating:

  • 1/2 cup all-purpose flour
  • 1/4 cup cornmeal
  • 2 large eggs
  • 1 cup breadcrumbs (plain or seasoned)
  • Vegetable oil for frying

Instructions

  1. Prepare Corn Mixture: In a medium bowl, combine corn, jalapeños, cheddar cheese, cream cheese, garlic powder, onion powder, salt, and pepper. Mix well.
  2. Shape and Chill: Form mixture into small balls, freeze on a baking sheet for 20-30 minutes.
  3. Coat Nuggets: Dip chilled nuggets into flour, then egg, and finally breadcrumb mixture.
  4. Fry: Heat oil to 350°F, fry nuggets in batches for 2-3 minutes until golden brown.
  5. Drain and Serve: Drain on paper towels before serving.

  • You can add chopped green onions or hot sauce for extra flavor.
  • Air fry at 400°F for 10-12 minutes, flipping halfway through.
  • Serve with ranch or chipotle mayo for dipping.
