Ingredients
Scale
Chicken Marinade
- 1 pound boneless, skinless chicken breasts, cut into 1-inch chunks
- 2 tbsp soy sauce
- 1 tbsp sriracha
- 2 tbsp white vinegar or apple cider vinegar
Sauté Ingredients
- 1 tbsp vegetable oil
- 1 tsp sesame seed oil
- 10 cloves garlic, finely chopped
- 2-4 jalapenos, thinly sliced
- 2 whole bell peppers, cut into 1-inch pieces
- 1 tbsp sugar
- 1 tsp ground black pepper
- 1 tsp garam masala or curry powder
- 2 tbsp chopped fresh cilantro leaves
- Sesame seeds and extra cilantro leaves for garnish
Instructions
- Marinate the Chicken: In a bowl, combine the soy sauce, sriracha, and vinegar. Add the cut chicken chunks, massage the mixture into the meat thoroughly, and let it marinate to absorb the flavors.
- Sear the Ingredients: Heat the vegetable oil and sesame seed oil together in a skillet over medium-high heat. Add the thinly sliced jalapenos and finely chopped garlic and sauté briefly until fragrant.
- Cook the Chicken: Add the marinated chicken to the skillet and cook until the chicken pieces turn golden and are mostly cooked through, stirring occasionally to prevent sticking.
- Add Sugar and Bell Peppers: Sprinkle the sugar over the chicken and toss to combine. Then add the bell pepper chunks, stirring to mix well with the chicken and jalapenos.
- Finish the Dish: Continue cooking for about 5 more minutes until the chicken is fully cooked and the bell peppers are tender-crisp. Stir in the garam masala and chopped cilantro leaves, mixing everything thoroughly.
- Serve: Remove from heat and serve hot, garnished with sesame seeds and additional fresh cilantro leaves for extra flavor and color.
Notes
- Adjust the number of jalapenos to control the spice level according to your preference.
- You can substitute garam masala with curry powder for a slightly different flavor profile.
- Use apple cider vinegar as an alternative to white vinegar for a milder tang.
- Serve with steamed rice or flatbread to complete the meal.
- For a gluten-free version, use gluten-free soy sauce tamari.
