- Cream Butter and Sugar: Place softened butter and sugar into a large mixing bowl. Mix using a hand mixer or stand mixer on medium speed for 1-2 minutes until the mixture is pale yellow, light, and fluffy.
- Add Wet Ingredients: Whisk in the egg, then pour in the milk and honey. Mix until all the ingredients are thoroughly combined.
- Add Dry Ingredients: Place a sieve over the bowl and sift in the flour and baking powder. Combine with a spatula until a dough begins to form, then transfer to a working surface and knead by hand until smooth.
- Roll Out Dough: Roll the dough between two big sheets of parchment paper to a thickness of about 3mm (â…› inch).
- Score and Cut: Using a well-floured gnocchi board or the back of a bread knife, create typical decorative lines on the dough, then cut into rectangular shapes with a knife.
- Chill the Dough: Place the cookie shapes on a baking tray lined with parchment paper and refrigerate for at least 30 minutes to firm up.
- Preheat Oven: Set the oven to 180°C (360°F) and prepare for baking by placing the rack in the middle position.
- Bake Cookies: Bake the cookies on the middle shelf for 12-15 minutes until the surface is slightly crispy and golden, while the cookies remain soft inside.
- Cool and Serve: Transfer the baked cookies to a cooling rack and allow them to cool completely before serving.
