Description

These Italian Honey Cookies are delicately sweet, soft on the inside with a slightly crispy golden surface. Made with butter, sugar, honey, and a hint of milk, these traditional cookies showcase a unique texture achieved by rolling and scoring the dough. Perfect with tea or coffee, they offer a delightful balance of flavors and a simple yet elegant treat that takes minimal time to prepare and bake.

Ingredients

Scale

Wet Ingredients

  • 100 g butter (softened)
  • 1 egg
  • 80 ml milk
  • 100 g light honey

Dry Ingredients

  • 120 g sugar
  • 500 g all-purpose flour
  • 1 tablespoon baking powder

Instructions

  1. Cream Butter and Sugar: Place softened butter and sugar into a large mixing bowl. Mix using a hand mixer or stand mixer on medium speed for 1-2 minutes until the mixture is pale yellow, light, and fluffy.
  2. Add Wet Ingredients: Whisk in the egg, then pour in the milk and honey. Mix until all the ingredients are thoroughly combined.
  3. Add Dry Ingredients: Place a sieve over the bowl and sift in the flour and baking powder. Combine with a spatula until a dough begins to form, then transfer to a working surface and knead by hand until smooth.
  4. Roll Out Dough: Roll the dough between two big sheets of parchment paper to a thickness of about 3mm (â…› inch).
  5. Score and Cut: Using a well-floured gnocchi board or the back of a bread knife, create typical decorative lines on the dough, then cut into rectangular shapes with a knife.
  6. Chill the Dough: Place the cookie shapes on a baking tray lined with parchment paper and refrigerate for at least 30 minutes to firm up.
  7. Preheat Oven: Set the oven to 180°C (360°F) and prepare for baking by placing the rack in the middle position.
  8. Bake Cookies: Bake the cookies on the middle shelf for 12-15 minutes until the surface is slightly crispy and golden, while the cookies remain soft inside.
  9. Cool and Serve: Transfer the baked cookies to a cooling rack and allow them to cool completely before serving.

Notes

  • For best results, do not overbake; cookies should remain soft inside.
  • Using a gnocchi board creates the traditional textured lines but a fork or knife can also be used.
  • Make sure the butter is softened, not melted, for proper creaming.
  • Refrigerating the dough helps maintain shape during baking.
  • Store cookies in an airtight container at room temperature for up to 5 days.
