Description

  • 1 cup crushed pineapple, drained
  • 1/2 cup chopped pecans
  • 1/2 cup shredded coconut (optional)

For the Cream Cheese Frosting:

  • 8 ounces cream cheese, softened
  • 1/4 cup unsalted butter, softened
  • 1 1/2 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 1–2 tablespoons milk, as needed for consistency

Instructions

  1. Preheat and Prepare: Preheat the oven to 350°F. Grease and flour a 9×5-inch loaf pan.
  2. Mix Dry Ingredients: In a large bowl, whisk together the flour, sugars, baking soda, salt, cinnamon, and nutmeg.
  3. Combine Wet Ingredients: In another bowl, whisk eggs, oil, yogurt, and vanilla until smooth. Stir in bananas and pineapple.
  4. Blend and Bake: Add wet mixture to dry ingredients, fold in pecans and coconut. Pour into pan and bake for 55–65 minutes.
  5. Make Frosting: Beat cream cheese and butter, add sugar and vanilla. Adjust consistency with milk.
