- 2 cups cooked white or brown rice
Chicken:
- 2 cups cooked chicken breast or thighs, shredded or chopped
Barbecue Sauce Mixture:
- 1/2 cup honey barbecue sauce
- 1 tablespoon olive oil
- 1/2 cup diced red bell pepper
- 1/2 cup corn (fresh, canned, or thawed frozen)
- 1/4 cup diced red onion
- 1/4 teaspoon garlic powder
- Salt and pepper to taste
- 2 tablespoons chopped fresh parsley or green onions for garnish
Instructions
- Sauté Vegetables: Heat olive oil in a skillet, sauté bell pepper, corn, and red onion until tender.
- Add Chicken and Seasoning: Add cooked chicken, garlic powder, salt, and pepper. Stir in the honey barbecue sauce and cook until heated through.
- Combine Ingredients: Add cooked rice, mix well, and heat through. Adjust seasoning if needed.
- Garnish and Serve: Garnish with parsley or green onions before serving.
