Dough:

  • 2 1/4 teaspoons active dry yeast (1 packet)
  • 1 1/2 cups warm water (110°F/45°C)
  • 1 teaspoon sugar
  • 3 1/2 cups all-purpose flour
  • 1 1/2 teaspoons salt
  • 1 tablespoon olive oil

Instructions

  1. Prepare Yeast: In a small bowl, combine yeast, warm water, and sugar. Let sit until foamy, about 5–10 minutes.
  2. Mix Dough: Whisk flour and salt in a large bowl. Add yeast mixture and olive oil, mix until dough forms.
  3. Knead Dough: Knead on floured surface for 8–10 minutes or with a stand mixer for 5–6 minutes until elastic.
  4. Rise: Place dough in oiled bowl, cover, and let rise for 1–1 1/2 hours until doubled.
  5. Shape and Bake: Divide dough, flatten into rounds, rest, then bake in preheated oven at 475°F (245°C) for 2–3 minutes per side.

Notes

  • For softer pitas, increase baking time on one side and skip flipping.
  • You can also cook pitas in a hot cast-iron skillet for 2 minutes per side.
  • Store in an airtight bag for up to 3 days or freeze for up to 3 months.
