Dough:
- 2 1/4 teaspoons active dry yeast (1 packet)
- 1 1/2 cups warm water (110°F/45°C)
- 1 teaspoon sugar
- 3 1/2 cups all-purpose flour
- 1 1/2 teaspoons salt
- 1 tablespoon olive oil
Instructions
- Prepare Yeast: In a small bowl, combine yeast, warm water, and sugar. Let sit until foamy, about 5–10 minutes.
- Mix Dough: Whisk flour and salt in a large bowl. Add yeast mixture and olive oil, mix until dough forms.
- Knead Dough: Knead on floured surface for 8–10 minutes or with a stand mixer for 5–6 minutes until elastic.
- Rise: Place dough in oiled bowl, cover, and let rise for 1–1 1/2 hours until doubled.
- Shape and Bake: Divide dough, flatten into rounds, rest, then bake in preheated oven at 475°F (245°C) for 2–3 minutes per side.
Notes
- For softer pitas, increase baking time on one side and skip flipping.
- You can also cook pitas in a hot cast-iron skillet for 2 minutes per side.
- Store in an airtight bag for up to 3 days or freeze for up to 3 months.
