Instructions
- Combine Ingredients: In a medium saucepan over medium heat, add the chopped peaches, finely chopped onion, golden raisins, brown sugar, apple cider vinegar, grated fresh ginger, minced garlic, ground cinnamon, ground cloves, crushed red pepper flakes if using, and salt. Stir gently to combine all components evenly.
- Bring to Boil: Heat the mixture until it reaches a gentle boil, allowing the sugar to dissolve and the flavors to start melding together. Stir occasionally to prevent sticking.
- Simmer: Reduce the heat to low and let the chutney simmer uncovered for 45 to 60 minutes. Stir occasionally during this period, allowing the peach mixture to thicken and the fruit to soften thoroughly, achieving the desired chutney consistency.
- Cool: Remove the saucepan from heat and allow the chutney to cool to room temperature. Cooling helps the flavors deepen and the chutney to thicken further.
- Store: Transfer the cooled chutney into sterilized jars and refrigerate. The chutney will continue to thicken as it chills. Refrigerate for up to 2 weeks, or process jars in a water bath for longer shelf life.
