  • 2 cups Medjool dates (pitted)

Oat Mixture:

  • 1 cup rolled oats
  • 1/2 cup almond flour
  • 1/2 cup chopped nuts (such as almonds or walnuts)
  • 1/4 cup coconut oil (melted)
  • 1/4 cup maple syrup or honey
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 2 tablespoons chia seeds (optional)

Instructions

  1. Preheat the oven: Preheat the oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
  2. Prepare date paste: In a food processor, pulse the pitted dates until they form a sticky paste. Set aside.
  3. Mix dry ingredients: In a large bowl, combine oats, almond flour, chopped nuts, cinnamon, salt, and chia seeds if using.
  4. Add wet ingredients: Mix in melted coconut oil, maple syrup, and vanilla extract until well combined.
  5. Assemble: Press half of the oat mixture into the pan to form a base. Spread date paste over the base. Top with remaining oat mixture and press down gently.
  6. Bake: Bake for 20–25 minutes until golden brown. Let cool before slicing into bars.
