Wet Ingredients:
- 3 ripe bananas (mashed)
- 2 large eggs
- 1/3 cup honey or maple syrup
- 1/4 cup plain Greek yogurt
- 1 teaspoon vanilla extract
- 1/4 cup milk (dairy or non-dairy)
Dry Ingredients:
- 1 1/2 cups rolled oats
- 1/2 cup whole wheat flour
- 1 teaspoon baking soda
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
- 1/4 cup chopped walnuts or dark chocolate chips (optional)
Instructions
- Preheat the oven: Preheat the oven to 350°F (175°C) and prepare a muffin tin with liners or grease.
- Mix wet ingredients: In a bowl, mash bananas and mix with eggs, honey/maple syrup, Greek yogurt, vanilla extract, and milk.
- Combine dry ingredients: In another bowl, mix oats, flour, baking soda, cinnamon, and salt.
- Combine wet and dry: Gradually mix dry ingredients into the wet mixture until just combined. Add walnuts/chocolate chips if desired.
- Bake: Divide batter into muffin cups and bake for 18–22 minutes until a toothpick comes out clean. Cool before serving.
Notes
- You can substitute Greek yogurt with unsweetened applesauce or a dairy-free yogurt.
- These muffins freeze well for up to 2 months. Reheat in the microwave for a quick meal.
