  • 1 small yellow onion, diced

Instructions

  1. Preheat the oven: Set your oven to 375°F (190°C) so it’s ready by the time your casserole is assembled.
  2. Cook the ground turkey: Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the ground turkey and cook it for 5-6 minutes, breaking it up with a spoon until it’s fully browned and no longer pink. Remove the turkey from the skillet and set aside.
  3. Sauté the vegetables and spices: In the same skillet, add the remaining tablespoon of olive oil. Sauté the diced onion, minced garlic, and diced red bell pepper for 3-4 minutes until softened. Stir in the dried thyme, smoked paprika, salt, and black pepper to evenly coat the veggies with flavor.
  4. Cook the sweet potatoes: Add the diced sweet potatoes to the skillet and pour in the chicken broth. Cover the pan and let it simmer for 10-12 minutes, stirring occasionally, until the sweet potatoes are tender but not mushy.
  5. Combine turkey and veggies: Return the cooked ground turkey to the skillet and mix all the ingredients together thoroughly.
  6. Assemble the casserole: Transfer the turkey and vegetable mixture to a lightly greased 9×9-inch casserole dish. If using, sprinkle the shredded mozzarella or cheddar cheese evenly on top.
