Description

This Greek Yogurt Banana Bread recipe is moist, flavorful, and easy to make. The addition of Greek yogurt adds a tangy richness to the classic banana bread, making it a perfect treat for any time of day.

Ingredients

Scale

For the banana bread:

  • 23 ripe bananas, mashed
  • 1/2 cup plain Greek yogurt
  • 1/2 cup granulated sugar
  • 1/4 cup melted butter (or vegetable oil)
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1/2 tsp ground cinnamon (optional)
  • 1/2 cup chopped walnuts or chocolate chips (optional)

Instructions

  1. Preheat the oven: Preheat your oven to 350°F (175°C) and grease/flour a 9×5-inch loaf pan.
  2. Mix wet ingredients: In a large bowl, mash the bananas. Add Greek yogurt, sugar, melted butter, eggs, and vanilla extract. Mix well.
  3. Combine dry ingredients: In a separate bowl, whisk flour, baking soda, salt, and cinnamon.
  4. Combine wet and dry: Gradually add dry ingredients to wet mixture. Stir until just combined. Fold in nuts/chocolate if using.
  5. Bake: Pour batter into loaf pan. Bake for 60-70 minutes. Check for doneness with a toothpick.
  6. Cool: Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

  • Use ripe bananas for best flavor.
  • Substitute Greek yogurt with non-dairy yogurt for a dairy-free version.
