Instructions
- Preheat the oven: Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Prepare dry ingredients: In a medium bowl, whisk together the gluten-free flour, baking soda, cream of tartar, and salt.
- Cream butter and sugar: In a large bowl, cream the softened butter and sugar until light and fluffy.
- Add wet ingredients: Beat in the egg and vanilla extract until fully combined.
- Combine dry and wet ingredients: Gradually add the dry ingredients to the wet mixture and mix until a soft dough forms.
- Prepare coating: In a small bowl, combine the 2 tablespoons sugar and cinnamon.
- Shape and coat: Scoop tablespoon-sized portions of dough, roll into balls, and coat each ball in the cinnamon-sugar mixture.
- Bake: Place the coated dough balls on the baking sheet, flatten slightly, and bake for 10–12 minutes.
- Cool: Allow the cookies to cool on the pan before transferring to a wire rack to cool completely.
