Description

Dry Ingredients:

  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon salt

Wet Ingredients:

  • 1/2 cup sourdough discard (unfed)
  • 1/2 cup brown sugar (packed)
  • 1/3 cup molasses
  • 2 large eggs
  • 1/2 cup buttermilk
  • 1/4 cup unsalted butter (melted)
  • 1 teaspoon vanilla extract
  • Oil for frying

For the glaze (optional):

  • 1 cup powdered sugar
  • 12 tablespoons milk
  • 1/2 teaspoon vanilla extract

Instructions

  1. Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, spices, and salt.
  2. Wet Ingredients: In a separate large bowl, combine the sourdough discard, brown sugar, molasses, eggs, buttermilk, melted butter, and vanilla extract until smooth.
  3. Gradually stir the dry ingredients into the wet mixture until a soft, slightly sticky dough forms.
  4. Cover and chill the dough for at least 1 hour to make it easier to handle.
  5. On a lightly floured surface, roll out the dough to about 1/2-inch thickness. Use a donut cutter or two round cutters to shape the donuts and holes.
  6. Heat about 2 inches of oil in a deep pan to 350°F. Fry donuts in batches, 1–2 minutes per side, until golden brown and puffed.
  7. Remove with a slotted spoon and drain on paper towels.
  8. For the glaze, whisk powdered sugar, milk, and vanilla until smooth. Dip warm donuts into the glaze or drizzle over the top.
  9. Serve warm or at room temperature.

  • You can skip the glaze and dust with powdered sugar or cinnamon sugar instead.
