  • 1 tablespoon olive oil
  • 2 tablespoons unsalted butter
  • 4 cloves garlic (minced)
  • 1 cup long-grain white rice
  • 2 cups chicken broth (or vegetable broth for vegetarian)
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ cup grated Parmesan cheese
  • 2 tablespoons chopped fresh parsley (optional)

Instructions

  1. In a medium saucepan, heat the olive oil and butter over medium heat. Add the minced garlic and sauté for 1–2 minutes until fragrant, being careful not to brown it.
  2. Stir in the rice and cook for another 1–2 minutes, allowing the grains to get lightly toasted.
  3. Pour in the chicken broth, then season with salt and pepper. Bring to a boil, then reduce the heat to low, cover, and simmer for 15–18 minutes or until the rice is tender and the liquid is absorbed.
  4. Remove from heat and let sit, covered, for 5 minutes. Fluff the rice with a fork, then stir in the Parmesan cheese until melted and well combined.
  5. Garnish with chopped parsley if desired and serve warm.

  • For a creamier texture, stir in a splash of heavy cream or milk along with the Parmesan.
