- 1 tablespoon olive oil
- 2 tablespoons unsalted butter
- 4 cloves garlic (minced)
- 1 cup long-grain white rice
- 2 cups chicken broth (or vegetable broth for vegetarian)
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ½ cup grated Parmesan cheese
- 2 tablespoons chopped fresh parsley (optional)
Instructions
- In a medium saucepan, heat the olive oil and butter over medium heat. Add the minced garlic and sauté for 1–2 minutes until fragrant, being careful not to brown it.
- Stir in the rice and cook for another 1–2 minutes, allowing the grains to get lightly toasted.
- Pour in the chicken broth, then season with salt and pepper. Bring to a boil, then reduce the heat to low, cover, and simmer for 15–18 minutes or until the rice is tender and the liquid is absorbed.
- Remove from heat and let sit, covered, for 5 minutes. Fluff the rice with a fork, then stir in the Parmesan cheese until melted and well combined.
- Garnish with chopped parsley if desired and serve warm.
Notes
- For a creamier texture, stir in a splash of heavy cream or milk along with the Parmesan.
- You can also substitute brown rice, but adjust the cook time and liquid as needed.
