Pasta:
- 12 ounces spaghetti or linguine
Sauce:
- 3 tablespoons olive oil
- 3 tablespoons unsalted butter
- 5 cloves garlic, minced
- 16 ounces cremini or button mushrooms, sliced
- 1/2 teaspoon red pepper flakes
- 1/2 cup dry white wine or vegetable broth
- 1/2 cup grated Parmesan cheese
- 1/4 cup fresh parsley, chopped
- Salt and black pepper, to taste
- Extra Parmesan for serving
Instructions
- Cook the pasta: In a pot of salted boiling water, cook the pasta until al dente. Reserve 1/2 cup of pasta water, then drain.
- Prepare the sauce: In a skillet, heat olive oil and butter. Add garlic, cook until fragrant. Add mushrooms and red pepper, cook until browned. Pour in wine, simmer until reduced.
- Combine: Add cooked pasta to the skillet. Stir in Parmesan and reserved pasta water to create a sauce. Season with salt and pepper.
- Serve: Garnish with parsley and extra Parmesan.
Notes
- You can add spinach or sun-dried tomatoes for extra flavor.
- For a creamy version, stir in 1/4 cup heavy cream with the Parmesan.
