Description

A flavorful and easy-to-make dish, this Garlic Herb Chicken & Carrot Plate is a delicious combination of tender chicken breasts marinated in garlic and herbs, roasted alongside honey-glazed carrots. Perfect for a simple yet satisfying meal.

Ingredients

Scale

For the Chicken:

  • 4 boneless skinless chicken breasts
  • 3 tablespoons olive oil (divided)
  • 3 cloves garlic (minced)
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried oregano
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

For the Carrots:

  • 1 pound carrots (peeled and cut into sticks)
  • 1 tablespoon honey
  • 1 tablespoon fresh parsley (chopped)
  • lemon wedges for serving

Instructions

  1. Preheat the oven: Preheat the oven to 400°F (200°C).
  2. Marinate the chicken: In a bowl, coat the chicken breasts with 2 tablespoons olive oil, garlic, thyme, rosemary, oregano, paprika, salt, and pepper. Let marinate for 10 minutes.
  3. Prepare the carrots: Toss the carrot sticks with the remaining olive oil, honey, salt, and pepper. Arrange on a baking sheet.
  4. Roast: Place the marinated chicken on one side of the sheet and roast for 25-30 minutes, flipping halfway through, until cooked through.
  5. Finish and serve: Sprinkle with fresh parsley, serve with lemon wedges, and enjoy!

Notes

  • For extra flavor, deglaze pan drippings with chicken broth or white wine for a quick sauce.
  • You can use boneless chicken thighs for a juicier alternative.
