Ingredients
Scale
Sausage and Sauce
- 4 Italian sausages, sliced
- 3 cloves fresh garlic, minced
- 2 tablespoons butter
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 2 tablespoons fresh parsley, chopped
- Salt, to taste
- Black pepper, to taste
Pasta
- 12 ounces pasta (fettuccine or penne)
Instructions
- Sauté Sausage: In a large skillet over medium heat, add the sliced Italian sausages and cook until browned and cooked through, about 5 to 7 minutes.
- Add Garlic and Butter: Add the minced fresh garlic and butter to the skillet with the sausage. Cook for 1 to 2 minutes, stirring frequently until the garlic is fragrant and the butter has melted.
- Cook Pasta: While the sausage cooks, bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente. Reserve about half a cup of pasta water before draining the pasta.
- Make Sauce: Pour the heavy cream into the skillet with the sausage and garlic mixture. Stir in the grated Parmesan cheese and cook on low heat, stirring continuously until the cheese is melted and the sauce is smooth.
- Combine Pasta and Sauce: Add the drained pasta to the skillet with the creamy sausage sauce. Toss to coat evenly. Add reserved pasta water a little at a time to adjust the sauce consistency to your liking.
- Finish and Serve: Stir in the chopped fresh parsley, and season with salt and black pepper to taste. Serve immediately while hot.
Notes
- Use Italian sausages with or without casing depending on preference; removing casing before slicing is optional.
- Reserve pasta water is important to help loosen and bind the sauce to the pasta.
- For a lighter option, substitute heavy cream with half-and-half or milk, but the sauce will be less rich.
- Grate fresh Parmesan cheese for best flavor instead of pre-grated cheese.
- This recipe can be made gluten-free by using gluten-free pasta.
