Description

Delight in these colorful and fluffy Funfetti Pancakes, perfect for a festive breakfast or a kid-friendly treat. Made with a classic pancake batter studded with vibrant rainbow sprinkles, these pancakes bring fun and flavor to your morning table. Served warm with butter and maple syrup, they’re an easy and joyful way to start your day.

Ingredients

Scale

Dry Ingredients

  • 1 1/2 cups all-purpose flour
  • 2 tablespoons granulated sugar
  • 1 tablespoon baking powder
  • 1/4 teaspoon salt

Wet Ingredients

  • 1 1/4 cups milk
  • 1 large egg
  • 3 tablespoons unsalted butter, melted
  • 1 teaspoon vanilla extract

Add-ins and For Cooking

  • 1/4 cup rainbow sprinkles (preferably jimmies-style to prevent color bleeding)
  • Additional butter or oil for cooking
  • Maple syrup for serving

Instructions

  1. Combine Dry Ingredients: In a large bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt to evenly distribute all dry components.
  2. Mix Wet Ingredients: In a separate bowl, whisk together the milk, egg, melted unsalted butter, and vanilla extract until the mixture is well combined and smooth.
  3. Combine Wet and Dry: Pour the wet ingredients into the bowl with the dry ingredients. Stir gently until just combined, taking care not to overmix the batter to keep pancakes light and fluffy.
  4. Add Sprinkles: Gently fold in the rainbow sprinkles into the batter, being careful to avoid excessive mixing to prevent color bleeding.
  5. Preheat Skillet: Heat a nonstick skillet or griddle over medium heat. Lightly grease it with butter or oil to ensure pancakes don’t stick.
  6. Cook Pancakes: Pour approximately 1/4 cup of batter per pancake onto the skillet. Cook until bubbles form on the surface and the edges appear set, then carefully flip the pancakes. Continue cooking for another 1 to 2 minutes until the pancakes are golden brown and fully cooked through.
  7. Repeat and Serve: Repeat the cooking process with remaining batter. Serve the pancakes warm, topped with additional butter and maple syrup as desired.

Notes

  • Use jimmies-style sprinkles to prevent color bleeding into the batter.
  • For extra sweetness, top pancakes with whipped cream or a dusting of powdered sugar.
