Description

This French Onion Tortellini recipe combines the rich, caramelized flavors of classic French onion soup with tender cheese tortellini, topped with melted Gruyère and Parmesan cheeses. Perfectly comforting yet easy to prepare, it makes a delicious main course that can be made vegetarian by opting for vegetable broth.

Ingredients

Scale

Onion Sauce

  • 3 large yellow onions, thinly sliced
  • 3 tablespoons butter
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon fresh thyme leaves
  • 1 tablespoon all-purpose flour
  • 1 cup beef broth (or vegetable broth for vegetarian)
  • 1/2 cup dry white wine
  • Salt and freshly ground black pepper to taste

Tortellini and Toppings

  • 1 package (20 oz) cheese tortellini
  • 1 cup grated Gruyère cheese
  • 1/2 cup grated Parmesan cheese
  • Chopped fresh parsley for garnish

Instructions

  1. Caramelize Onions: In a large heavy-bottomed pot or Dutch oven, melt the butter with olive oil over medium heat. Add the thinly sliced onions and cook, stirring occasionally, for 30-40 minutes until the onions are deeply caramelized and golden brown. This slow cooking develops the rich French onion flavor.
  2. Add Garlic and Thyme: Stir in the minced garlic and fresh thyme leaves, cooking for an additional minute until fragrant.
  3. Make Roux: Sprinkle the all-purpose flour over the onion mixture. Cook for 1-2 minutes, stirring constantly to form a roux which will help thicken the sauce.
  4. Add Liquids and Simmer: Gradually pour in the beef broth and dry white wine, stirring continuously to avoid lumps. Let the mixture simmer for 5 minutes until the sauce thickens slightly. Season with salt and freshly ground black pepper to taste.
  5. Cook Tortellini: While the sauce simmers, cook the cheese tortellini in a separate pot of salted boiling water according to package instructions until al dente. Drain and set aside.
  6. Combine Tortellini and Sauce: Add the cooked tortellini to the onion sauce in the pot, gently tossing to coat them evenly.
  7. Prepare for Broiling: Transfer the tortellini and onion mixture to a large oven-safe skillet or baking dish.
  8. Add Cheese Topping: Evenly sprinkle the grated Gruyère and Parmesan cheeses over the top of the tortellini mixture.
  9. Broil: Place the skillet or dish under the oven broiler for 2-3 minutes, watching carefully until the cheese is melted, bubbly, and slightly golden brown.
  10. Serve: Remove from the oven, allow to cool for a few minutes, then garnish with chopped fresh parsley before serving.

Notes

  • To make this dish vegetarian, substitute vegetable broth for the beef broth.
  • Caramelizing onions slowly is key to developing deep flavor; do not rush this step.
  • If you do not have Gruyère, Swiss cheese can be a good substitute.
  • Watch the broiler carefully to prevent the cheese from burning.
  • This recipe serves 5 and can be easily doubled for larger groups.
