These French Onion Steak Pinwheels are a delicious and elegant main course featuring tender flank steak rolled up with caramelized onions and Gruyère cheese. Perfect for a special dinner or entertaining guests.

Flank Steak:
- 1½ pounds flank steak (butterflied and pounded to ½ inch thick)
Caramelized Onions:
- 2 tablespoons olive oil
- 2 large yellow onions (thinly sliced)
- 1 tablespoon balsamic vinegar
- 1 teaspoon fresh thyme leaves (or ½ teaspoon dried)
Additional:
- 1 cup shredded Gruyère cheese
- Salt and pepper to taste
- Kitchen twine or toothpicks for securing
Instructions
- Caramelize Onions: Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the sliced onions and cook slowly for 15–20 minutes until caramelized. Stir in balsamic vinegar and thyme, then let cool slightly.
- Prepare Steak: Season butterflied flank steak with salt and pepper. Spread caramelized onions over the steak, sprinkle Gruyère cheese, and roll up tightly.
- Cook Pinwheels: Sear in olive oil, then roast in a preheated oven until desired doneness. Rest before serving.
Notes
- To make slicing easier, chill the rolled steak before cutting. You can also grill the pinwheels instead of roasting.
