Description

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C) to prepare for baking the stuffed chicken breasts.
  2. Sauté Vegetables: Heat olive oil in a skillet over medium heat. Add sliced red and yellow bell peppers and onions. Sauté for 5-7 minutes until they become soft and slightly caramelized. Remove from heat and set aside.
  3. Mix Seasonings: In a small bowl, combine chili powder, cumin, garlic powder, smoked paprika, salt, and pepper. Stir well to blend all the spices.
  4. Prepare Chicken: Carefully cut a pocket into each chicken breast, being careful not to cut all the way through. Rub the seasoning mixture evenly onto the outside of each chicken breast. Stuff the pockets with the sautéed peppers and onions along with a little bit of shredded cheddar cheese.
  5. Bake: Place the stuffed chicken breasts in a greased baking dish. Bake in the preheated oven for 25-30 minutes or until the chicken is cooked through and the internal temperature reaches 165°F (74°C).
