For the Casserole:
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 small red onion, sliced
- 1 cup sour cream
- 1 cup shredded Mexican blend cheese
- ½ cup cream cheese, softened
- 1 tablespoon lime juice
- ¼ cup chopped cilantro
Instructions
- Preheat the oven: Preheat the oven to 375°F.
- Cook the chicken: In a large skillet, cook the chicken with spices until browned and cooked through. Set aside.
- Sauté the vegetables: In the same skillet, sauté the bell peppers and red onion until tender.
