Ingredients
Ground Beef Mixture:
1 pound ground beef, 1 tablespoon olive oil, 1 small yellow onion (diced), 2 cloves garlic (minced), 1 red bell pepper (diced), 1 green bell pepper (diced)
Remaining Ingredients:
1 cup uncooked long grain white rice, 2 cups beef broth, 1 (14.5-ounce) can diced tomatoes (with juice), 1 (8-ounce) can tomato sauce, 1 teaspoon Italian seasoning, ½ teaspoon salt, ¼ teaspoon black pepper, 1½ cups shredded cheddar cheese, chopped fresh parsley (for garnish, optional)
Instructions
- Cook the Ground Beef Mixture: Heat olive oil in a skillet, sauté onion, garlic, bell peppers, and ground beef until browned.
- Add Remaining Ingredients: Stir in rice, broth, tomatoes, tomato sauce, Italian seasoning, salt, and pepper.
- Simmer: Bring to a boil, then cover and simmer until rice is tender.
- Add Cheese: Remove from heat, top with cheddar cheese, and let melt.
- Garnish and Serve: Garnish with parsley before serving.
