Sauce:

- 2 cups whole milk
- 2 cups shredded cheddar cheese
- 1/2 cup sour cream
- chopped green onions or bacon bits for garnish (optional)
Instructions
- Prepare Ground Beef Mixture: Cook ground beef in a skillet until browned. Add onion and garlic, cook until softened. Transfer to slow cooker.
- Prepare Soup: Add potatoes, broth, carrots, celery, salt, pepper, basil, and paprika to the slow cooker. Cook on low for 6–7 hours or high for 3–4 hours.
- Prepare Sauce: Melt butter in a saucepan, whisk in flour, then milk. Stir into slow cooker. Add cheddar cheese, stir until melted. Stir in sour cream before serving. Garnish with onions or bacon.
