  • 1/3 cup warm water (to thin sauce)

Instructions

  1. Prepare the Marinade: In a bowl, combine soy sauce, fish sauce, brown sugar, lime juice, minced garlic, grated ginger, curry powder, and vegetable oil. Stir well to create the marinade.
  2. Marinate the Chicken: Add the bite-sized chicken thighs to the marinade and toss to coat all pieces evenly. Cover the bowl and refrigerate for at least 30 minutes, up to 4 hours to allow flavors to develop.
  3. Skewer the Chicken: Thread the marinated chicken pieces onto the soaked wooden skewers, distributing the meat evenly on each skewer.
  4. Preheat the Grill: Heat a grill or grill pan over medium-high heat, ensuring it is adequately hot before cooking.
  5. Grill the Chicken: Place the skewers on the grill and cook for 10 to 12 minutes, turning occasionally until the chicken is thoroughly cooked through and has a slight char on the edges.
