For the soup:
- 4 large yellow onions, thinly sliced
- 3 tablespoons unsalted butter
- 2 tablespoons olive oil
- 1 teaspoon sugar
- 1 teaspoon salt
- 2 cloves garlic, minced
- 1/2 cup dry white wine
- 6 cups beef broth
- 2 teaspoons fresh thyme leaves or 1 teaspoon dried thyme
- 2 bay leaves
- Salt and black pepper to taste
For serving:
- 1 baguette, sliced
- 2 cups grated Gruyère cheese
Instructions
- In a large heavy pot, melt the butter with olive oil over medium heat. Add the onions, sugar, and salt. Cook, stirring often, for 25–30 minutes until the onions are soft and caramelized.
- Stir in the garlic and cook for 1 minute. Pour in the white wine to deglaze the pot, scraping up any browned bits.
- Add the beef broth, thyme, and bay leaves. Bring to a simmer, cover, and cook for 20 minutes.
- Remove the bay leaves and adjust seasoning with salt and black pepper.
- Preheat the broiler. Ladle the soup into oven-safe bowls, place a slice of baguette on top, and sprinkle generously with Gruyère.
- Broil for 2–3 minutes until the cheese is melted and bubbly. Serve hot.
Notes
- For extra depth of flavor, use a mix of beef and chicken broth.
- If Gruyère is unavailable, substitute Swiss or Provolone cheese.
