Ingredients
Scale
Main Ingredients:
- 2 cups semi-sweet chocolate chips
- 1/2 cup creamy peanut butter
Additional Ingredients:
- 3 cups chow mein noodles
- 36 mini candy-coated chocolate eggs (such as Cadbury Mini Eggs)
Instructions
- Prepare the Chocolate Mixture: Line a baking sheet with parchment paper. In a microwave-safe bowl, melt the chocolate chips and peanut butter together in 30-second intervals, stirring between each, until smooth and fully melted.
- Combine with Noodles: Gently fold in the chow mein noodles until evenly coated with the chocolate mixture.
- Form the Nests: Scoop heaping tablespoons of the mixture onto the prepared baking sheet and shape each into a nest by creating a small indentation in the center with the back of a spoon.
- Add Candy Eggs: Place 2–3 candy eggs in the center of each nest.
- Chill and Serve: Refrigerate the cookies for about 30 minutes or until set. Serve chilled or at room temperature.
Notes
- For a nut-free version, use sunflower seed butter or skip the peanut butter entirely and add 1 tablespoon of coconut oil for smoother texture.
- You can also use shredded coconut or pretzel sticks in place of chow mein noodles for variation.
