Ingredients
Scale
Cake Batter
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1 tbsp baking powder
- 1/2 tsp salt
- 1 cup milk
- 2 eggs
- 1 tbsp vanilla extract
- 1/2 cup unsalted butter, melted
Cinnamon Swirl
- 1/2 cup brown sugar
- 1 tbsp ground cinnamon
- 3 tbsp melted butter
Vanilla Glaze
- 1 cup powdered sugar
- 2–3 tbsp milk
- 1/2 tsp vanilla extract
Instructions
- Preheat and Prepare: Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish thoroughly to prevent sticking.
- Make the Batter: In a large bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt. Add in the milk, eggs, vanilla extract, and melted butter. Mix everything until the batter is smooth and well combined. Pour this batter evenly into the prepared baking dish.
- Create the Cinnamon Swirl: In a small bowl, combine the brown sugar, ground cinnamon, and melted butter. Drop spoonfuls of this mixture over the batter in the baking dish. Use a knife to gently swirl the cinnamon mixture into the batter, creating a marbled effect.
- Bake: Place the dish in the preheated oven and bake for 30 to 35 minutes. Check doneness by inserting a toothpick in the center — it should come out clean when the cake is ready.
- Prepare the Glaze: While the cake is still warm, whisk together the powdered sugar, 2 to 3 tablespoons of milk, and vanilla extract until smooth and pourable.
- Glaze and Serve: Drizzle the vanilla glaze evenly over the warm cake. Allow it to cool slightly, then cut into squares and serve. Enjoy this delicious cinnamon roll inspired coffee cake warm or at room temperature.
Notes
- For a richer flavor, use whole milk or substitute with half-and-half.
- Do not over-swirl the cinnamon mixture; gentle swirling ensures defined pockets of cinnamon flavor.
- The glaze can be adjusted to your preferred consistency by varying the amount of milk.
- Store leftovers covered at room temperature for up to 2 days or refrigerate for up to 5 days.
- This cake can be served warm or cold, but warming it slightly enhances the flavors.
