Ingredients
Scale
Crust
- 2 ½ cups (250 g) graham cracker crumbs (or vanilla cookie crumbs)
- ½ cup (115 g) unsalted butter, melted
- 2 tbsp sugar
Filling
- 8 oz (225 g) cream cheese, softened
- 1 cup (240 ml) heavy whipping cream
- ½ cup (100 g) powdered sugar
- 1 tsp vanilla extract
- ½ cup (120 ml) sweetened condensed milk
- Gel food coloring (pastel pink, blue, yellow, purple, or preferred colors)
Instructions
- Preheat oven: Preheat the oven to 350°F (175°C) to prepare for baking the crust.
- Make crust mixture: In a medium bowl, combine graham cracker crumbs, melted butter, and sugar. Mix thoroughly until the crumbs are evenly coated with butter and sugar.
- Form crust: Press the crumb mixture firmly into the bottom and up the sides of a 9-inch pie pan to create an even crust layer.
- Bake crust: Bake the crust for 8-10 minutes, then remove it from the oven and allow it to cool completely to set the crust.
- Beat cream cheese: In a large mixing bowl, beat the softened cream cheese until it becomes smooth and creamy, ensuring a lump-free base for the filling.
- Whip cream: Separately, whip the heavy cream until stiff peaks form, which will add volume and lightness to the filling.
- Mix filling ingredients: Gradually add powdered sugar, vanilla extract, and sweetened condensed milk into the cream cheese, mixing well until fully combined.
- Fold whipped cream: Gently fold the whipped cream into the cream cheese mixture, maintaining the fluffy texture without deflating the whipped cream.
- Color filling: Divide the filling evenly into separate bowls according to the number of colors desired, add a few drops of gel food coloring to each, and mix gently until pastel shades are achieved.
- Assemble pie with swirl: Spoon dollops of each colored filling into the cooled crust, layering them and swirling the colors together with a butter knife or skewer to create a marbled effect.
- Chill pie: Refrigerate the pie for at least 4 hours or overnight so the filling sets firmly and the flavors meld.
- Serve: Slice the pie and serve chilled for a refreshing and decorative dessert.
Notes
- For a firmer crust, chill the crust in the fridge for 20 minutes before baking.
- Use gel food coloring as it won’t alter the filling’s consistency or flavor.
- The pie is best served chilled and can be stored covered in the refrigerator for up to 3 days.
- To enhance flavor, ensure cream cheese is at room temperature before mixing.
- Adding different pastel colors creates an appealing festive look for Easter or springtime celebrations.
