Meat and Seasoning
- 1 pound lean ground beef
- 1 packet (1 ounce) taco seasoning
Salad Base
- 3 to 4 Romaine lettuce hearts, rinsed then chopped
- 1 cup black beans, rinsed
- 1 large tomato, chopped or sliced cherry tomatoes
- 1/2 cup shredded cheddar cheese
Additional Ingredients
- 1 ½ cups nacho cheese Doritos, broken into bite-size pieces
- 1 cup Catalina dressing or your favorite salad dressing (ranch recommended)
- Fresh cilantro (optional, for garnish)
Instructions
- Cook the Ground Beef: Brown and crumble the lean ground beef in a large skillet over medium-high heat. Once cooked through, drain the grease. Add the taco seasoning and the amount of water specified on the seasoning packet. Stir well and bring the mixture to a boil. Reduce the heat to low and let it simmer gently for 10 minutes. Remove from heat and allow the meat to cool slightly.
- Assemble the Salad: In a large salad bowl, combine the chopped Romaine lettuce, rinsed black beans, chopped tomatoes (or cherry tomatoes), and shredded cheddar cheese. Add the slightly cooled ground beef, and gently toss all the ingredients together to combine evenly. You may serve immediately or cover and refrigerate until ready to eat. Do not add Doritos chips yet to avoid sogginess.
- Serve with Doritos and Dressing: When ready to serve, add the broken Doritos chips and the Catalina (or preferred) dressing to the salad bowl. Toss thoroughly to coat the salad evenly with chips and dressing. Garnish with fresh cilantro if desired and serve promptly for maximum crunch.
