- Prepare the canner: Begin by boiling water in your canner. Submerge the jars and lids in the boiling water to sterilize them thoroughly, ensuring your pumpkin butter will be safely preserved.
- Warm the pumpkin puree: In a large saucepan over medium heat, warm the 6 cups of pumpkin puree to make it easier to mix with the sugar and spices.
- Mix in sugar and spices: Add the 4 cups of sugar, 2 tablespoons of cinnamon, 1 teaspoon nutmeg, 1 teaspoon ginger, and 1 teaspoon cloves to the warmed pumpkin puree, stirring well to combine all the flavors.
- Simmer the mixture: Lower the heat to a gentle simmer and cook the pumpkin mixture for about 30 minutes, stirring frequently until the butter thickens to a spreadable consistency.
- Fill the jars: Carefully spoon the hot pumpkin butter into the sterilized jars, leaving about 1/4 inch of headspace at the top to allow for expansion during processing.
- Seal the jars: Place the sterilized canning lids on the jars and tighten them to fingertip tight, ensuring they are secure but not overly tight.
