Description

These Delicious Cherry Pie Bites are a perfect miniature dessert treat, combining flaky pie crust with sweet, thickened cherry filling. Easy to prepare and bake, they are ideal for parties, snacks, or anytime you want a bite-sized sweet indulgence.

Ingredients

Scale

Pie Crust

  • 1 package refrigerated pie crusts

Filling

  • 1 can cherry pie filling (about 21 oz)
  • 1 tablespoon cornstarch
  • 1 tablespoon water

Topping (Optional)

  • 1 tablespoon sugar

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C). Grease a mini muffin tin or line it with mini muffin liners to prevent sticking.
  2. Prepare Pie Crust Circles: Unroll the refrigerated pie crusts and use a cookie cutter or a glass approximately 2 inches in diameter to cut out small circles.
  3. Thicken Cherry Filling: In a small saucepan over medium heat, combine the cherry pie filling with cornstarch and water. Stir constantly for 3-4 minutes until the mixture thickens. Remove from heat and let it cool slightly.
  4. Line Muffin Tin: Press each pie crust circle gently into the cups of the mini muffin tin, forming the shell for each bite.
  5. Fill Bites: Spoon a small amount of the thickened cherry filling into each pie crust shell, filling about three-quarters full to avoid overflow.
  6. Bake: Place the muffin tin in the preheated oven and bake for 15–18 minutes until the crust is golden brown and the filling is bubbly.
  7. Add Topping and Cool: Optionally sprinkle the tops with sugar for added sweetness and texture. Allow the cherry pie bites to cool for a few minutes before removing them from the tin and serving.

Notes

  • Using mini muffin liners makes cleanup easier and prevents sticking.
  • Ensure the cherry filling is thickened before filling the crusts to avoid soggy bottoms.
  • These can be served warm or at room temperature.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
  • For a gluten-free version, substitute the pie crust with a gluten-free dough.
