- 1 pound ground chicken
- 1 small onion, finely diced
- 1 medium carrot, grated
- 1 small zucchini, grated and excess moisture squeezed out
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1 large egg
- 2 cloves garlic, minced
- 1 tablespoon fresh parsley, chopped
- 1 teaspoon salt
- 1/2 teaspoon black pepper

Instructions
- Mix Ingredients: In a large mixing bowl, combine ground chicken, onion, carrot, zucchini, breadcrumbs, Parmesan, egg, garlic, parsley, salt, and pepper. Mix well until evenly combined.
- Form Patties: Form mixture into 8 equal patties, about 1 inch thick.
- Preheat Air Fryer: Preheat air fryer to 375°F (190°C) for 3 minutes. Lightly spray the basket with olive oil spray.
- Air Fry Rissoles: Place rissoles in a single layer without overcrowding. Air fry for 10–12 minutes, flipping halfway through, until golden brown and internal temperature reaches 165°F (74°C).
- Serve: Serve hot with salad, mashed potatoes, or dipping sauce of choice.

- You can substitute ground chicken with turkey.
