  • 1 pound ground chicken
  • 1 small onion, finely diced
  • 1 medium carrot, grated
  • 1 small zucchini, grated and excess moisture squeezed out
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 large egg
  • 2 cloves garlic, minced
  • 1 tablespoon fresh parsley, chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • olive oil spray

Instructions

  1. Mix Ingredients: In a large mixing bowl, combine ground chicken, onion, carrot, zucchini, breadcrumbs, Parmesan, egg, garlic, parsley, salt, and pepper. Mix well until evenly combined.
  2. Form Patties: Form mixture into 8 equal patties, about 1 inch thick.
  3. Preheat Air Fryer: Preheat air fryer to 375°F (190°C) for 3 minutes. Lightly spray the basket with olive oil spray.
  4. Air Fry Rissoles: Place rissoles in a single layer without overcrowding. Air fry for 10–12 minutes, flipping halfway through, until golden brown and internal temperature reaches 165°F (74°C).
