Description

Fresh Raspberry Mixture:

  • 1 1/2 cups fresh raspberries
  • 1/4 cup raspberry preserves

Raspberry Liquid:

  • 1/2 cup raspberry liqueur or juice

Mascarpone Filling:

  • 1 cup heavy cream
  • 8 ounces mascarpone cheese (softened)
  • 1/3 cup granulated sugar
  • 1 teaspoon vanilla extract

Assembly:

  • 24 ladyfinger cookies (savoiardi)
  • 1/4 cup powdered sugar (for dusting)
  • Extra raspberries and mint leaves for garnish (optional)

Instructions

  1. Fresh Raspberry Mixture: In a small bowl, gently mash the fresh raspberries with raspberry preserves.
  2. Raspberry Liquid: In a separate shallow dish, combine raspberry liqueur or juice with 2 tablespoons of water.
  3. Mascarpone Filling: In a large mixing bowl, beat the heavy cream with sugar and vanilla extract until soft peaks form. Fold in the mascarpone cheese until smooth and creamy.
  4. Assembly: Quickly dip each ladyfinger into the raspberry liquid (do not soak), then arrange a layer in the bottom of a 9×9-inch dish. Spread half of the mascarpone mixture over the ladyfingers, followed by half of the mashed raspberry mixture. Repeat with another layer of dipped ladyfingers, mascarpone, and raspberries. Cover and refrigerate for at least 4 hours, preferably overnight. Before serving, dust with powdered sugar and garnish with fresh raspberries and mint leaves if desired.

Notes

  • For a non-alcoholic version, use raspberry juice or cranberry-raspberry juice in place of liqueur.
