  • 1 large cucumber, peeled and diced
  • 1 tablespoon lime zest
  • 1/2 cup fresh lime juice
  • 1/4 cup caster sugar (can substitute with honey or agave)
  • 1 small jalapeño, finely chopped and deseeded

To Serve

  • 12 fresh oysters, high-quality and freshly shucked
  • Optional: jalapeño slices for garnish


Instructions

  1. Prepare Granita Mixture: In a jug, combine the diced cucumber, lime zest, fresh lime juice, caster sugar, and finely chopped jalapeño (with seeds removed). Blitz the mixture using a blender or food processor until smooth and bright.
  2. Freeze the Mixture: Pour the blended liquid into a shallow container no deeper than 3cm to ensure even freezing. Place it in the freezer for at least 6 hours, or until completely frozen.
  3. Scrape the Granita: Once frozen solid, use a fork to scrape the mixture into light, fluffy ice shavings, creating the signature granita texture.
  4. Serve: Arrange the fresh oysters on a chilled serving platter. Top each oyster with a generous spoonful of the cucumber lime jalapeño granita.
  5. Garnish (Optional): Add jalapeño slices on top of the granita for an additional spicy kick and colorful presentation.
