Tortilla Cups:
- 12 small flour or corn tortillas
Taco Filling:
- 1 pound ground beef
- 1 packet taco seasoning mix
- 1/2 cup water
Toppings:
- 1 cup shredded cheddar cheese
- 1/2 cup diced tomatoes
- 1/4 cup sliced black olives
- 1/4 cup chopped green onions
- 1/4 cup sour cream

Instructions
- Preheat oven and prepare muffin tin: Preheat oven to 375°F. Lightly spray a muffin tin with cooking spray.
- Prepare tortilla cups: Cut tortillas into smaller rounds or strips to fit muffin cups. Press tortilla pieces into each muffin cup to form a cup shape.
- Cook taco filling: Brown ground beef in a skillet over medium heat. Drain excess fat. Add taco seasoning and water, simmer for 5 minutes.
- Assemble taco cups: Spoon seasoned beef into each tortilla cup. Sprinkle with cheddar cheese. Bake for 10-12 minutes.
- Add toppings and serve: Top with diced tomatoes, olives, green onions, and sour cream. Serve warm.
